Family Night!

I had been wanting my parents to come over for dinner for awhile and I decided that I should have them over before life went crazy. I decided to serve bruschetta chicken, mashed potatoes, salad and bread with balsamic vinegar and olive oil. I will admit that I only made the bruschetta chicken and mashed potatoes, but you can't do everything right? Everyone loved the food and thanks to my mom the clean-up wasn't so bad :)

Bruschetta Chicken

1/2 cup all-purpose flour
2 eggs, lightly beaten
4 boneless skinless chicken breast halves
1/2 cup grated Parmesan cheese
1/4 cup dry Italian bread crumbs
1 tablespoon butter, melted
2 large tomatoes, seeded and chopped
Dry basil, enough to evenly coat the mixture, as well as to taste
Garlic powder, enough to lightly coat, also to taste
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
Place flour and eggs in separate shallow bowls. Dip chicken in flour, then in eggs. Place in a greased 13x9 baking dish (I put foil in mine for easy clean up). Combine 1/4 cup Parmesan cheese, bread crumbs and butter; sprinkle over chicken.

Loosely cover baking dish with foil. Bake at 375° for 20 minutes. Uncover; bake 5-10 minutes longer or until top is browned.

Meanwhile, in a bowl, combine the remaining ingredients. Spoon the mixture over the chicken and top the chicken with the remaining parmesan. Return to the oven for 5 minutes or until the tomato mixture is heated and the cheese is melted.
