Taco Salad

Taco salad is one of my favorite meals because it's so fast. Although it may be a little high on the fat and calorie side, it has a ton of veggies and mostly wholesome components. The interesting thing about taco salad is that everybody makes their taco salad differently. Not only from household to household but even from person to person. For example, Dirk likes to put ketchup on his taco salad (and tacos too) and I like either Ranch dressing or La Victoria's taco sauce and sour cream. All of these components completely change the flavor. I decided that I'd share my taco salad with you all and hope that you'll share yours as well so that we can get some new ideas.

Dallas Family Taco Salad

Start with Mission tortilla chips:

Then we add spinach (I try to use spinach as often as I can in place of lettuce for nutritional value, something I learned from Dirk's dad)

Next is the cooked ground turkey meat. Because ground turkey tends to be bland I really jazz it up using my Emeril's Essence which I make in bulk and keep on hand, chili powder, cumin, garlic salt, regular salt and fresh ground pepper. I don't really know the portions, I just do it to eye and what I know tastes good from experience.

Now we add black beans and corn:

And finally tomatoes, avocado and cheddar cheese:

    I had my baby boy on Thursday morning, and just sat down to re-read your birth story. I too had a pretty bad tear, 2nd-3rd degree. Breastfeeding is also frustrating. I feel like I can relate to your struggles....this mommy stuff is hard! I just keep telling myself God will not give me more than I can handle. Congrats again to you!


  2. Congratulations Steph! You're so right, God will not give you more than you can handle. Although it seems like so much work right now I can assure you that it gets easier and easier. I was told the 2 week mark was a turning point and it was. From there on out things get easier each week. The first to second month we dealt with a ton of gas issues but those are mostly gone now and things are so much easier and are getting fun as she's responding to us by talking and smiling.

    I know that trying to heal and being in pain makes everything so much more difficult but just know that time is going to fly by and things will gradually get easier. I'm sure you'll shed some tears over it all. I'm sure you have a great support system but if you ever need to vent to a new mommy you can e-mail me at I will be praying for you. Keep up the good work.

    By the way, I just looked at your blog. Your baby boy is absolutely adorable!!!
